| 1 pound | sharp Cheddar cheese grated |
| 1 cup | olive oil mayonnaise |
| 2 cloves | garlic pressed |
| 1 cup | pecans chopped |
| 2 | scallion |
| 1/2 teaspoon | chipotle tabasco sauce |
Combine all ingredients and mix well. line a mold or pie plate or ring with plastic wrap and press cheese mixture into it. Refrigerate (preferable overnight). When ready to serve unmold onto platter and cover with strawberry preserves, if desired. Serve with crackers
